Fruit Biscuits

1 tsp chia seeds
2 tsp water
1 cup oats
¼ cup plain flour
½ tsp cinnamon
2 PURITY Creamy Sweet Potato with Cinnamon Pouches
1 PURITY Banana, Apple and Yoghurt Pouch
Filling options:
    1) Pop the chia seeds into the water and leave to stand for 10-15 minutes (they should begin to gel in this time).
    2) Add the PURITY Banana, Apple and Yoghurt Pouch to the PURITY Creamy Sweet Potato Pouches.
    3) Mix the PURITY Banana, Apple and Yoghurt Pouch and PURITY Creamy Sweet Potato Pouches together.
    4) Stir through the soaked chia seeds.
    5) Add the oats, flour and cinnamon, mix well. This should form a cookie dough with a texture a little like play dough.
    6) Use a tablespoon to scoop the mixture, then roll into balls with damp hands (this recipe will make 20 tablespoons); place the balls on a lined baking tray.
    7) Wet a fork, and give each ball a light squish with the fork.
    8) Bake at 180°C for 20-25 minutes, allow to cool.
    9) The cookies should have a soft texture. 
    10) Store in an airtight container for 2-3 days, or freeze and thaw as needed.
